The menu moves across four courses, each one built to feature the pearl: Caviar Croquetas, Tagliolini in Dill Cream, Sea Bass with Champagne Sabayon, Fried Chicken & Caviar. Cold caviar against warm sauces, the meal carried by the pearl from start to close.
